Chicken Pulao is a popular and flavorful one-pot rice dish enjoyed across South Asia and beyond. Unlike biryani, which is more elaborate, pulao is simpler to prepare but equally delicious, making it a favorite for everyday meals and special occasions alike.

The dish begins with marinating the chicken. Bone-in or boneless pieces of chicken are seasoned with a mixture of yogurt, garlic, ginger, and an array of spices such as cumin, coriander, garam masala, and turmeric. This marination process not only tenderizes the chicken but also infuses it with rich flavors.

In a large pot, ghee or oil is heated, and whole spices like bay leaves, cardamom, cloves, and cinnamon are added to release their aromas. Finely sliced onions are then sautéed until golden brown, providing a sweet and savory base for the pulao. The marinated chicken is added to the pot and cooked until it is lightly browned.

Once cooked, Chicken Pulao is fluffed with a fork and garnished with fresh cilantro and mint leaves. It is typically served with a side of raita, a yogurt-based condiment, and sometimes a simple salad or pickles.
