Kofta Biryani is a delightful fusion of flavorful meatballs and aromatic rice, creating a dish that’s both rich and comforting. Originating from the Indian subcontinent, this biryani variant combines the traditional biryani elements with the succulent texture of koftas, or spiced meatballs.
To prepare Kofta Biryani, start by making the koftas. Ground meat, usually lamb or chicken, is mixed with finely chopped onions, garlic, ginger, green chilies, and a blend of spices including garam masala, cumin, coriander, and turmeric. The mixture is shaped into small balls and shallow-fried until golden brown, ensuring they are cooked through but still tender.
The biryani rice is prepared separately. Basmati rice is the preferred choice for its long, fragrant grains. The rice is first soaked, then partially cooked with whole spices like cloves, cardamom, bay leaves, and cinnamon to infuse it with flavor.
A crucial component of Kofta Biryani is the layering process. In a large pot, ghee or clarified butter is heated, and then a layer of rice is added, followed by a layer of koftas. This process is repeated until all the rice and koftas are used, often finishing with a layer of rice. Saffron soaked in warm milk, fried onions, and fresh herbs like mint and cilantro are added between the layers for additional fragrance and color.
The assembled biryani is then covered tightly and cooked on low heat, allowing the flavors to meld together. This method, known as “dum” cooking, ensures that the rice is perfectly cooked and infused with the flavors of the spices and koftas.
